Low Calorie desserts

Hello and welcome to my article on low calorie desserts. Most of us like a sweet at the end of a fine meal, but some of us are watching how many calories we take in. And in the mini series of articles. I will be telling you about and how to make some low calorie desserts for you to enjoy. So lets get preparing and making.

The low calorie dessert i’m going to be telling you about today is the apricot fool with rose and pistachio honeycomb

This dessert will serve 4

The preparation time for this dessert will take 10 minutes

And the cooking time is 25 minutes

You will need

5 tablespoons of granulated sugar
2 tablespoons of golden syrup
1 tablespoon of bicarbonated soda
20 edible unsprayed rose petals these will be avaliable in specialist cake shops
50g of pistachios

600g of ripe apricots,halved and stoned

The juice of one large orange
50g of caster sugar
2 cinnamon sticks which will be broken
500g tub of greek yoghurt
Zest of 1 lemon

Right lets start by making this low calorie desserts

To make the honey combe, gently heat the sugar and the syrup in a heavy based saucepan until the sugar melts. Then you need to boil the mixture until it turns into a deep, golden caramel. Whisk in the bicarbonated soda( this will make it foam up by the way) and then quickly whisk in the rose petals and the pistachios. Pour on to an oiled baking sheet, set onto a chopping board and leave it to cool.

Now place the apricots, orange juice, sugar and cinammon sticks into a pan. Cover this and gently cook for at least 15 mins until the apricots are soft. Remove the cinnamon sticks and leave to cool. Spoon the youghurt into a bowl and stir in the lemon zest. Fold in most of the cooled apricots and spoon into four serving glasses. Top this with the remaining fruit and juices.

Then roughly break up the honeycomb with a rolling pin and add a few chunks into each glass. Just so you know that this is low calorie desserts and this dessert apricot fool with rose and pistachio honeycomb has 430 calories and contains just 20g of fat.
